Tell more. What graphics card? What type of installation? X?
Tried the vga=xxx bootcodes? Try modifying menu.lst part to vga=792, that will give 1024x768x24...

Check /home/dsl/.xserverrc
It is now (I guess) "Xvesa -res 800x600x24 -nolisten tcp"
Kill X with control-alt-backspace, and type on the console "Xvesa -res 1024x768x24 -nolisten tcp". If it works, just change it permanently. Then you'll get high res X, but low res booting...
The grub menu is generic and not created specific to your machine.
Most of the boot lines therein are samples to use depending on the cpapbility of your machine.
If you are running framebuffer then not alot of choices.
If you are running Xvesa then the DSLpanel -> Xvesa will display other resolution that your system can use with the tinyK xserver in DSL.
Look at the file /home/dsl/.xserverrc to see which Xserver you are running.
If you load XFree86 then you will have many more choices in resolutions.
