Looking though the examples, if isn't clear if .uci files can include a desktop icon.

Sure!

All my game uci's all have icons and menus.
RTCW.uci, Doom3.uci, Quake3Arena.uci, UT2004.uci, etc..
Openoffice and Opera have them too..

The same way you add a menu option to the user.tar.gz file in the .uci build,
you can put the same ~/.xtdesktop .png and .lnk files in it ..
