Any good reads on doing this would be great.

Or would I be better off simply trying to install DSL as Debian and then update to the full version?

I assume you're talking about the netinstall cd iso? If so, you just burn a cd from it and boot up from that cd. It's an installer.

No. Can't update that way because dsl is not pure debian Woody.
