As far as I know, you are pretty-much unlimited in the number of partitions you can have (within reason, I guess). An ideal minimum setup for frugal is the base partition, the swap partition (for better performance / less RAM worries), and a partition for /home, /opt, etc., but you could also have other partitions for seperating out your data... eg. you could have another partition for windows, another fat32 partition for data that you want to access from either dsl or win, etc.
