 It would be great to have a VNC server live CD which can bring any old computer(s) without monitor, keyboard and mouse with just a ethernet card intalled to life. It would also have everything the regular live CD has, like install to hard disk etc.

 If there is such a CD already out there or can be done please let me know.

You can build your own ISO using the vnc mydsl package and whatever configs necessary to set it up for your needs.  The mkmydsl script should make the task pretty easy.
