and modify /etc/inittab to go to runlevel 2 as default
After logging in how do I stop X from starting?
Is there an init script starting this somewhere or another file?

Yep. look in the
".xinitrc" file in you homedir
and if you use bash ,there's X starting everytime the session is opened for user from ".bashrc" in his homedir.
