In order to use man pages in DSL, you will need to also add the man application and some formatting software (groff, for example). The man app in DSL is not really man...it's a script that accesses online html pages.
Editing KNOPPIX requires that you mount it (KNOPPIX is a cloop, or compressed loop, file), copy the contents of the mount point to a writeable location, make your changes, and recreate the cloop. Search the forums for "remastering" to get more info. If you just want to add files to the CD, you can do that with the mkmydsl script.
