There are also two instances of /boot/grub/menu.lst in a Frugal install. One is in the image and is not ever going to be writable, but you don't need to write that one anyway. The other is in the ramdisk or a persistant directory, if you set it up to have one, and you can write that that one as root and it will save in the backup, if you set up your backup. Also, you can and should save that menu.lst file to removeable media and put it somewhere in case you need it again.
