You can look for some remastering scripts (I have the one by mikshaw in mind) for hints that may apply to your hd-install.
Otherwise, you can use `whereas` and `find` etc. to find where they could be located and remove them.  You may also want to remove the icons/menu entries.

Gnumeric is available in the gtk2 section. I've used it and it works fine -- just remember you have to install gtk2 (in the same section). FWIW, UCI extensions really aren't designed for hard drive installs.
