I would start troubleshooting by running "top" and seeing if any program is using excess amounts memory. Keep track of the memory usage for about 10 min. to make sure there are no memory leaks. If you never come close to using all of your memory then it could be a bad memory module.
Run a memory diagnostic program like Microsoft's Memory Diagnostic. (Note that this program is by microsoft so you will need to create the startup disk via a windows machine or with wine).
Also a lot of freezing problems are caused by heat. If you don't use excess amounts of memory and there are no memory i/o errors, then you should check to make sure that your computer is not getting too hot. I could be way off with my suggestions, but that is where I would start.
